src="http://i3.meishichina.com/attachment/201606/11/14656125431251.jpg"/></center></p><p>&nbsp;</p><p>23:蒸熟的面皮放到抹油的盛器里。每一个蒸好的面皮上都刷上一层薄薄的油,以免沾到一起。依次做好。</p><p>&nbsp;</p><p><center><img style="FLOAT: src="http://i3.meishichina.com/attachment/201606/11/14656166481303.jpg"/></center></p><p>&nbsp;红薯淀粉能增加凉皮的光泽度,还会更筋道。不建议选用其他类的淀粉。搅拌面糊时一定要顺着一个方向搅拌,这样能增加面皮的筋度。面糊要无颗粒,细而不断流下的状态,这样在铺满盘底的时候,更有流动性,面皮也会更薄更软。</p><p><center><img src="http://i3.meishichina.com/attachment/201606/11/14656166586924.jpg"/></center></p><p>一次不要舀太多面糊,避免过厚不容易熟,还会影响口感。&nbsp;刚开始会掌握不好凉皮的厚度,做一两张就会熟悉面糊的用量了。</p><p><center><img style="FLOAT: none"
