<p><strong>层层的甜蜜--白皮酥</strong></p><p><strong></strong> </p><p> <strong>小时候,捧着吃酥皮点心,生怕那酥香的渣渣掉下来的高兴样子,经常在我脑海里浮现,直到现在我对中式点心还情有独钟,更因为它是老爸最爱吃的点心,所以一直以来我都有一个愿望就是把白皮酥做得又漂亮又好吃,象商店卖的一样,让我爸爸尝尝,经过了几次失败后,我得到了好多经验,这一次,我一定把白皮酥做好送给我亲爱的老爸。<center><img src="http://i3.meishichina.com/attachment/201407/13/14052314096457.jpg"/></center></strong></p><p><strong>材料:松子白油,如果没有,可用自制猪油,黄油做是不起层的,也不好吃。或者是点心起酥油(淘宝上有售)。</strong></p><p><strong>皮料:高筋粉250克,松子油25克、温水125克。</strong></p><p><strong>酥料:低筋粉250克,松子油125克。</strong></p><p><strong>馅料:绿豆馅,黑豆馅。</strong></p><p><strong>做法:</strong></p><p><strong>将高筋粉倒在案板上,中间开窝,加入松子白油,温水,将松子白油搅散,和成皮面面团,将面团揉透,盖上保鲜袋,静饧20分钟。</strong></p><p><center><img title="皮面面团" src="http://i3.meishichina.com/attachment/201407/13/14052340477079.jpg"/></center></p><p><strong>将低筋粉倒在案板上,放上松子油,将面粉与松子白油混合,用手搓均匀成为酥面,用搓的手法记住。盖上保鲜袋,防止风干。</strong></p><p><center><img src="http://i3.meishichina.com/attachment/201407/13/14052339825507.jpg"/></center></p><p><strong>两种面团都做好了。</strong></p><p><strong>做白皮酥:</strong></p><p><strong>把皮面面团和酥面面团分成若干个小剂子,约15克的样子。我这里把酥面的剂子揪得大一点,搓成均匀的小球球。</strong></p><p><center><img src="http://i3.meishichina.com/attachment/201407/13/14052344898634.jpg"/></center></p><p><strong>采用包包子的手法把它包好,不要露酥面。</strong></p><p><strong>并把收口朝下,第一次擀卷,油酥皮用手略压扁,由中间向两端擀成椭圆形簿片。</strong></p><p><center><img src="http://i3.meishichina.com/attachment/201407/13/14052350892072.jpg"/></center></p><p><strong>松弛好后再次擀开,第二次擀开用手略压扁,由中间向两端擀成椭圆形薄片,由下向上卷起,收口朝下。盖上保鲜袋,松弛20~30分钟,即完成油酥皮。这是小包酥的手法。</strong></p><p><strong>包馅
