/>今天挑一道简单但是非常开胃下饭的川式家常菜和大家分享吧,可能和你以往熟悉的酸豆角炒肉末有那么一点点不同哦。前两天陪姨妈一行跟团去都江堰的时候,中午团餐就有这道菜,旁边一位北京来的姐姐拿筷子一粒一粒挑着豆角丁问我:你说这个豆角到底腌过还是没腌过啊,怎么一下吃着像腌过的,一下吃着又没味?哈哈,此情此景,恰似我在成都初遇这道菜。<br /><br />我的博客里曾经放过一道酸豆角炒肉末,和台湾某美食节目学的,当时那道菜在节目里被评委打了101分,我曾经以为这就是酸豆角炒肉末的至尊做法了,到了四川之后就不断地发现什么叫学无止境……所以又有了这个版本的肉末酸豆角,哦,不对,按照当地的叫法,应该是“烂肉酸豆角”。内什么,烂肉可万万不是烂掉的肉哈,是四川这边对炒的碎碎烂烂的粗肉末形象的叫法。可以今天说这道菜从菜名到做法都是十足的四川家常味。<br /><br />至于这道菜和我们常见做法最大的不同,就是酸豆角和普通豆角两掺的做法。第一次见到的时候还不是很理解,为什么要额外加一份鲜豆角呢?直到我自己泡菜坛子中的老坛酸豆角出缸,突然间豁然开朗——那酸爽,太够味儿了,加一些没有泡过的豆角能够平衡整道菜的口味,保留原有开胃功效的同时,不但口感和味道层次更加丰富,而且酸味和咸味都能更好的被分担,整道菜既下饭,又不会因酸的过于尖锐而引起食用者的不悦,酸咸度恰到好处,这才体会到了这菜的奥妙。<br block;"alt="两掺法打造酸爽开胃的川味家常菜【烂肉酸豆角】"title="两掺法打造酸爽开胃的川味家常菜【烂肉酸豆角】" /></center>主料:酸豆角100g,鲜豆角150g,粗肉末200g<br />调料:葱姜蒜末各5g,小米辣2根,泡辣椒一根,料酒2汤匙,酱油1汤匙,糖和盐少许<br /><br />步骤:<br />1、酸豇豆和鲜豇豆洗净都切成丁,分开放置,泡辣椒切碎;<br /></center>2、锅中不放油(或少量油),直接倒入酸豆角小火煸掉一部分生酸气后盛出备用;<br /><br />3、锅底加少许油加入新鲜豇豆翻炒一下去除豆生气,煸到六七成熟,同时还可加少许盐提前调味;<br /><center><img />1、烂肉:成都这边把这种带粗肉末的炒菜常常称作“烂肉##”,听着挺好玩的。后来了解到成都餐馆里烂肉酸豆角这道菜不少都是这样两掺着做的,经过尝试,我也比较喜欢这种混合制法,所以分享给大家。<br />2、酸豆角的处理:酸豆角先干锅煸炒就是在电视里学习的方法,据说这样处理过的酸豆角肉末整体风味更柔和,也更容易吃上瘾,电视里那道菜的另一个亮点是加了切丁的萝卜干,这次我没有加,但是你可以试试。<br />3、用盐:酸豆角本身有咸度,所以用盐很谨慎,我是少量多次慢慢调:先单独给新鲜豇豆加了一点盐调味,又给肉末加了一点盐,每次用量都不多,最后出锅前再视情况补一丁点儿。相信只要酸豆角味道好,这道菜控制好盐量就是成功的关键了。<br />4、自制酸豆角:泡豇豆很简单,只是要选品质好的细嫩型鲜豇豆(不要选那种老的,发白的,比较空的和粗细不均匀的),洗净晾干后丢进泡菜坛子,泡久的豇豆非常的酸,炒菜确实需要多搭配一些配料缓解酸度和咸度。<br />5、搭配泡椒更对味儿哦。<br /><br /><center><img
