扯面


                                                <p><center><img src="http://i3.meishichina.com/attachment/201408/16/14081849566696.jpg" title="DSC_5120_副本.jpg" style="font-family: arial, helvetica, sans-serif; text-align: center; white-space: normal;"/></center></p><p>&nbsp; &nbsp; 虽然做过很多种面食,但是这扯面,我还是第一次做。正所谓万变不离其宗,仔细阅读了教程,制作起来还比较顺手,口感也非常棒。扯面的浇头就用了最简单的西红柿鸡蛋卤。&nbsp; &nbsp;</p><p><center><img src="http://i3.meishichina.com/attachment/201408/16/14081849993384.jpg" title="DSC_5118_副本.jpg"/></center></p><p>&nbsp; &nbsp; 面团原料:特一粉200克,精盐2克,水100克</p><p>&nbsp; &nbsp; 浇头原料:鸡蛋2个,西红柿1个,油,盐,生抽适量</p><p>&nbsp; &nbsp; 做法:</p><p>&nbsp; &nbsp; 1.100克水中加入2克盐,搅拌至完全融解,</p><p>&nbsp; &nbsp; 2.加入200克特一粉,</p><p>&nbsp; &nbsp; 3.用筷子搅拌成无干粉的絮状,</p><p>&nbsp; &nbsp; 4.然后大致揉成团,饧10分钟,</p><p>&nbsp; &nbsp; 5.再揉,面团就很容易揉光滑了,</p><p>&nbsp; &nbsp; 6.面团包上保鲜膜,继续饧30分钟,</p><p>&nbsp; &nbsp; 7.将饧好的面团,直接搓成长条,</p><p>&nbsp; &nbsp; 8.切分成12个小面剂,</p><p>&nbsp; &nbsp; 9.将每个小面剂搓长,</p><p></p><p><center><img src="http://i3.meishichina.com/attachment/201408/16/14081850209475.jpg" title="0DSCF8989_拼图_副本.jpg" style="font-family: arial, helvetica, sans-serif; text-align: center; white-space: normal;"/></center></p><p></p><p>&nbsp; &nbsp;10.表面刷一层油,盖上保鲜膜,再饧1小时,</p><p>&nbsp; &nbsp;11.取一份面剂,用手掌按扁,</p><p>&nbsp; &nbsp;12.用擀面杖用力压一下,</p><p>&nbsp; &nbsp;13.捏着两头,慢慢抻长,在面板上轻轻地甩打两下,</p><p>&nbsp; &nbsp;14.中间压痕的地方特别的薄,几乎能透光,然后就从此处撕开,</p><p>&nbsp; &nbsp;15.一直撕到头,</p><p>&nbsp; &nbsp;16.分成两条,</p><p>&nbsp; &nbsp;17.如此做好全部扯面,</p><p>&nbsp; &nbsp;18.将扯面下锅煮熟,</p><p><center><img src="http://i3.meishichina.com/attachment/201408/16/14081850282214.jpg" title="0DSCF8998_拼图_副本.jpg" style="font-family: arial, helvetica, sans-serif; text-align: center; white-space: normal;"/></center></p><p>&nbsp; &nbsp;19.在煮面的过程中,制作浇头:西红柿切块,</p><p>&nbsp; &nbsp;20.鸡蛋打入碗中,打散,锅中倒油,下鸡蛋炒熟,划成小块,</p><p>&nbsp; &nbsp;21.倒入西红柿翻炒,</p><p>&nbsp; &nbsp;22.加少许生抽水,</p><p>&nbsp; &nbsp;23.煮5分钟,至有汤汁渗出,</p><p>&nbsp; &nbsp;24.加1小勺盐,</p><p>&nbsp; &nbsp;25.翻炒均匀后关火,</p><p>&nbsp; &nbsp;26.煮好的扯面,过一遍凉水,</p><p>&nbsp; &nbsp;27.扯面捞入碗中,浇上西红柿鸡蛋卤即可。</p><p><center><img src="http://i3.meishichina.com/attachment/201408/16/14081850315533.jpg" title="0DSCF9008_拼图_副本.jpg" style="font-family: arial, helvetica, sans-serif; text-align: center; white-space: normal;"/></center></p><p><center><img src="http://i3.meishichina.com/attachment/201408/16/14081850969453.jpg" title="DSC_5116_副本.jpg"/></center></p>
