/><br /></P><p>中秋是一年一度全家团聚的日子,月饼一定要有,从早先的苏式月饼开始,到后来广式月饼的独占鳌头,现在是百花齐放的局面。但是我最喜欢的还是微甜的广式椰蓉月饼,加上diy的乐趣,做月饼明显比吃过瘾多了。</P><p></p><p>配方来自飞雪无霜,结合鞋子的经验,在此感谢。</p><p>配料:(可以做10个75g的月饼)</p><p>馅心:</p><p>椰蓉 110g</p><p>黄油 79g</p><p>牛奶 40g</p><p>熟面粉 153g</p><p>糖粉 65g</p><p>鸡蛋1个(55g)</p><p></p><p>饼皮:</p><p>中粉108g</p><p>转化糖浆76g</p><p>色拉油33g</p><p>枧水2g</p><p></p><p>手粉:</p><p>高粉适量</p><p>先做饼皮。</p><p>做法:</p><p>1、现将转化糖浆、色拉油和枧水混合,搅拌均匀。</p><p><center><img /></center><br /><br />在饼皮等待的时间里,开始做馅心。</p><p>做法:</p><p>1、将黄油加牛奶混合,微波炉中火加热至黄油融化。<br /><center><img name="image_operate_22601408197447864" /></p><p>5、熟粉,我用一半的糯米粉,一半的中粉混合,微波炉高火打了2分钟后,取出,搅拌去除大的面块,之后再次高火两分钟,再次碾碎大面块,最后高火一分钟,至有面粉香味,同时面粉发黄。在最后时,间隔检查,注意别打的时间长了,容易烧糊。</p><p>tips:</p><p>1)面粉量如果比较少,需要的时间会相应减少。</p><p>2)尽量将面粉平摊。</p><p>3)面粉熟后,重量会减少,所以在制作熟面粉的时候,量要准备的比方子上的量要多点儿。<br />10、月饼出膜。(如果感觉压的不好,反过来,顺花纹再放入模具中,可以再次压反面。我开始没有经验,压的不好,为了补救,就这样做了,感觉效果还可以)</p><p><center><img name="image_operate_18831408195177045" /><br />12、烤箱预热170度,烤约15分钟至表面发白。拿出冷却后,刷蛋液。</p><p>注意:蛋液是蛋黄一个,稍微加点儿水。过筛。刷子沾蛋液后,在碗边刮一下,去除多余的蛋液,刷表面两次。<center><img name="image_operate_61521408195400335" />之后,再次170度,烤大约15分钟至表面上色为止。(如果月饼有开裂现象,需降低温度烤)</p><p>取出冷却后,放密封袋中等待回油,回油可以1到2天时间,可以放到冰箱里等待回油。所谓回油是将馅心中的油逐渐散发出来,将外面弄油润,这样外皮就变的酥软了。<br /><br /><center><img name="image_operate_61871408195743592"
