中秋,让月饼来得更猛烈些吧……

临近中秋,媒体上月饼的身影又悄然出现了,。我是不会去买月饼滴,太甜了而且价格远远高于了它的实际价值。脑袋一转,忽然有了DIY月饼的念头。于是乎在淘宝的烘焙用品店里,一下子置办了做月饼的用品,说干就干,行动派的一大特点,心里长草了,必须赶紧拔掉,否则会坐立不安滴哈哈,强迫症啊!</p><p>&nbsp; &nbsp;&nbsp; &nbsp; 我发现做这个上瘾的,节前的一个星期内,我一共做了4次月饼,一次免烤的桃山皮月饼,3次广式的,是有多工业化啊!~~</p><p>&nbsp; &nbsp;&nbsp; &nbsp;对于馅儿来说,蛋黄莲蓉无疑是人人都爱的,咸甜适度,我就来做这种了。</p><p>&nbsp;</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;言归正传,食材清单如下:</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;低筋面粉 &nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;100g</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;植物油&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;20g</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;转化糖浆&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;70g</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;枧水&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;2g</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;白莲蓉&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;200g</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;咸鸭蛋黄&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;6个</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;鸡蛋&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;1枚</p><p>&nbsp;&nbsp;&nbsp;&nbsp;</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;特殊用具:50g月饼木质模具、50g塑料模具</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;首选,将植物油和转化糖浆混合,导入干净且干燥的容器中,用打蛋器搅拌均匀,然后滴入枧水继续搅拌,直至完全混合。</p><p></p><p><center><img src="http://i3.meishichina.com/attachment/201409/9/14102346817528.jpg" width="400" height="400" border="0" hspace="0" vspace="0" title="" style="width: 400px; height: 500px;"/></center></p><p></p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;这个时间正好可以准备馅儿料,我用了6个蛋黄,50g的月饼,第一个包了一个整蛋黄,显然有点皮薄馅大了,差点露馅儿,结果果断把剩下的5个蛋黄对半切开,一个月饼放半个就够了。第一个永远是试水的,知道不合适马上调整了馅儿料比例,剩下的10个还是很匀称的,按照莲蓉25g,蛋黄10g,皮15g这个比例分的。</p><p><center><img src="http://i3.meishichina.com/attachment/201409/9/14102350846667.jpg" width="500" height="500" border="0" hspace="0" vspace="0" title="" style="width: 500px; height: 500px;"/></center></p><p></p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;接下来是最关键的环节,包!</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;先把蛋黄用莲蓉包起来,慢慢来不要着急,像按摩一样一个手网上推莲蓉,一个手往下按蛋黄。都包上没有露出蛋黄就可以了,然后滚圆。</p><p><center><img src="http://i3.meishichina.com/attachment/201409/9/14102351378074.jpg" width="400" height="400" border="0" hspace="0" vspace="0" title="" style="font-family: sans-serif; width: 400px; height: 400px;"/></center></p><p>&nbsp; &nbsp; &nbsp; &nbsp;然后再包第二层,面皮,和刚才的手法一样,别看只有那么小的面皮,耐心点,肯定能包下的。</p><p><center><img src="http://i3.meishichina.com/attachment/201409/9/14102351391216.jpg" width="400" height="400" border="0" hspace="0" vspace="0" title="" style="text-align: left; width: 400px; height: 400px;" width="400" height="400" border="0" hspace="0" vspace="0" title=""/></center></p><p></p><p></p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;我的这个模具也是在淘宝买的,可以同时装5个胚子,纠结了一会儿是买塑料的还是木质的,最后还是选择了木质的,塑料的价格比较便宜,而且可以买花板弄出不同的花纹,但是我个人还是喜欢手工雕刻用料天然的木质模具,这算不算对木头的偏爱情节呢,呵呵。不过必须说一句,这个木质的模具比较浅,经过实际使用发现,更适合做冰皮月饼和桃山皮月饼,绿豆糕类也行,总之是免烤的更漂亮。后来我为了做出广式月饼的最佳感觉,还是买了一个塑料模具,方形的,这个也是个人偏好。</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;在压模之前,还要给胚子占一些干面粉,防止沾粘在模具上。</p><p>&nbsp;<center><img src="http://i3.meishichina.com/attachment/201409/9/14102351423736.jpg" style="font-family: sans-serif; width: 280px; height: 280px;"/></center></p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp;&nbsp;加上第一个试验品,第一次一共做了11个小月饼,做好以后就可以开始烤制了呢,中层,上下火180度,5分钟先。</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 下面是第二次做的,用的塑料模具,话说还是这个做广式更好看。</p><p><center><img src="http://i3.meishichina.com/attachment/201409/9/14102367227616.jpg" width="500" height="500" border="0" hspace="0" vspace="0" title="" style="width: 500px; height: 500px;"/></center></p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp;</p><p>&nbsp; &nbsp; &nbsp; &nbsp; 然后取出月饼刷上蛋液,话说我刷的是蛋黄液,没有蛋清,也没加水,所以有些稠了,导致刷的时候不太均匀,下次再更正好了呵呵。刷好以后再继续烤10-15分钟,观察表面变成金黄色即可。</p><p><center><img src="http://i3.meishichina.com/attachment/201409/9/14102365104219.jpg" width="400" height="400" border="0" hspace="0" vspace="0" title="" style="width: 400px; height: 400px;"/></center></p><p>&nbsp;</p><p>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;出炉了,呼呼,美中不足就是卖相不太理想,蛋液太稠了,还有一点就是由于第一次做,我家的秤不是数显的不太准,分量把握的不够精准,有的大一些有的小点儿,大一些的压模不敢太使劲纹理、边缘就不那么清晰。一点一点修正,一点一点进步,做几回就会又好吃又好看了呢,加油!</p><p><center><img src="http://i3.meishichina.com/attachment/201409/9/14102366302186.jpg" width="500" height="500" border="0" hspace="0" vspace="0" title="" style="width: 500px; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;</p><p>&nbsp; &nbsp;&nbsp; &nbsp; PS:刚烤熟的月饼,要达到最好的效果,还得放2天,让月饼自己回油。所谓的回油,就是让月饼馅儿的油自己回渗出来,这样色泽会更漂亮,呈现出金黄色。</p><p>&nbsp; &nbsp;&nbsp; &nbsp;这个中秋不一样,因为给亲友的月饼,是自己亲手做的,在节前的倒数第二个工作日(周四),我给闺蜜发出了快递,周五她就收到了,欢喜的不得了。一块广式莲蓉蛋黄的,一块桃山皮的,话说这个桃山皮,有点像栗蓉和莲蓉的口感,是日本人发明的,免烤,很方便,而且甚至比冰皮还要健康。</p><p></p><p>&nbsp;</p><p><center><img src="http://i3.meishichina.com/attachment/201409/9/14102391164367.jpg" style="width: 400px;
