HeiGHT: 838px" name="image_operate_3471419943413937" src="http://i3.meishichina.com/attachment/good/2015/01/19/20150119210237481.jpg" alt="#九州筵席#<wbr>年饭必上鸿运当头的剁椒鱼头——两招制胜" title="#九州筵席#<wbr>年饭必上鸿运当头的剁椒鱼头——两招制胜" height="800" width="580"/></center></p><p>过年的团圆饭,不仅要做本地的传统家乡菜,还可以做家人喜欢的一些外地的传统名菜。我家过年必做的一道外地菜就是寓意鸿运当头的剁椒鱼头。那火辣辣的红剁椒,覆盖着白嫩嫩的鱼头,冒着热腾腾清香四溢的香气,鱼头的鲜美和剁辣椒的辣溶为一体,真真是独具一格。</p><p>这道菜既是父亲最爱滴也是老妈最拿手滴。其实,老妈从来不吃河鱼,她吃不惯,但是因为是父亲最爱的菜,所以她就认真研究多次试做,如今却成了她的拿手菜。<br/>父亲年轻的时候,经常去南方销售山东苹果,常常一去就是十多天。他总说,总吃不惯外地的饭菜,但是最爱的就是湘潭名菜剁椒鱼头。这道菜承载了他太多年轻时创业的艰辛与收获。</p><p>老妈做剁椒鱼头最爱用的就是我们这里米山水库的花鲢鱼。米山水库是威海市最大的水库,也是威海市的水源地,水质非常好,那里生长的鲢鱼、鲤鱼最有名,肉质细嫩无污泥味。老妈做这道菜有两个妙招绝对好用,一个是一定要先炒剁椒酱,另一个是要用醋来涂抹鱼头去腥。大部分人在制作这道菜时往往是加入少许盐、料酒腌渍祛腥,其实这种做法的效果并不理想,而老妈用醋来腌制更科学有效。<br/>我今年做了好多剁椒,我就用自己做的剁椒来做这道菜,剁椒的味道恰到好处地渗入到鱼肉当中,鱼头糯软,肥而不腻,咸鲜微辣,入口细嫩晶莹,带着一股温文尔雅的鲜辣味道,让人不得不爱!</p><p><center><img style="WiDTH: 586px;
