西班牙海鲜饭 Paella


                                                <p>西班牙室友为了向我展示正宗西班牙海鲜饭做法,特地飞回西班牙买锅买原料~ 太感动了!一定要将此菜谱广而告之。大家学起来 ~\(≧▽≦)/~啦啦啦</p><p>以下两人份</p><p><br/></p><p>1. Ingredients 原料</p><p>&nbsp; &nbsp; 1.1 Fish fumet 鱼汤:</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Monkfish bone 安康鱼脊椎骨-------- 1 根</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Onion 洋葱-------1 个,切小丁</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Dried pepper 干辣椒 ------- 1根,切碎</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Tomato 番茄 ------- 1个,切小块</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Paprika 辣椒粉 -------- 适量</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Salt 盐 -------- 适量</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Olive oil 橄榄油 -------- 适量</p><p><br/></p><p>&nbsp; &nbsp; 1.2 Paella 海鲜饭:</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Rice 米</p><p>(这种米比较特殊,非常饱满,煮出来也是一粒一粒分开的,不像国内那么柔软粘黏;我们用了1杯半的米,大家根据自己食量调整,米和鱼汤的比例大概1:3,鱼汤适量多准备些备用)</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp;&nbsp;Ñora 干甜椒 ------- 1 个,切碎</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Garlic 大蒜 ------- 2 瓣,切碎</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Parsley 欧芹 -------- 一小撮</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Red pepper 红灯笼椒 -------- 半个,切条</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Tomato 番茄 -------- 1 个</p><p>(看下图,搅磨成果蓉的样子,我们用的奶酪擦丝器,手工擦的,但是我认为搅拌器也可以做到同样效果)</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Clams 花蛤 ------- 200 克</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Squid 鱿鱼 ------- 1 只大的或者2只小的,切条或圈</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Monkfish 安康鱼肉 -------- 适量切块(这个可要可不要)</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Prawns 基围虾 ------- 200 克或 6只</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; Saffron 藏红花 -------- 若干丝,这个对调味和着色很重要,一般大家在餐馆吃到的人工色素</p><p>&nbsp;</p><p>2.
