                                                <p><strong>27的烘焙日记——酥皮的老婆饼</strong></p><p><strong>2014-06-21 &nbsp; &nbsp;21:55:33</strong></p><p><strong>&nbsp; &nbsp; 之前尝试做了一次老婆饼,结果不知道为什么全部爆开了,这次27再次挑战老婆饼,把成分稍微改了一下,变了一种口味,没想到居然成功啦~哈哈~~</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033594131695.jpg" title="DSC_0026.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; &nbsp; 食材:蛋黄液(刷表面用)</strong></p><p><strong>&nbsp; 1、水油皮:普通面粉150g、猪油60g、细砂糖10g、水42g。</strong></p><p><strong>&nbsp; 2、油酥团:普通面粉100g、猪油50g。</strong></p><p><strong>&nbsp; 3、糯米馅儿:糯米粉70g、细砂糖70g、水110g、熟白芝麻30g、猪油35g。</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033594226733.jpg" title="DSC_0005.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; &nbsp; 做法:</strong></p><p><strong>&nbsp; 1、先做糯米馅儿吧,水、细砂糖、猪油倒在锅里,大火煮开至沸腾,然后转小火。</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033594747693.jpg" title="DSC_0006.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 2、转小火后,立刻倒入糯米粉,快速搅匀,使糯米粉和水完全混合,成为黏稠的糊状,关火!</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033595842457.jpg" title="DSC_0008.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 3、加入全部的芝麻,搅拌均匀。</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033596322943.jpg" title="DSC_0009.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 4、倒入盘子里,冷藏着备用吧。</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033596822987.jpg" title="DSC_0010.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 5、开始做水油皮吧,将水油皮的全部食材加入在一起,揉成光滑的面团。</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033598417621.jpg" title="DSC_0011.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 6、静置15分钟,松弛松弛面团~</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033598537545.jpg" title="DSC_0012.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 7、在松弛的期间,我们开做肉酥油团,把酥油团的所有食材放在一起,充分糅合。</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/1403359874402.jpg" title="DSC_0013.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 8、按照http://home.meishichina.com/recipe-170246.html这里的第3-9步擀成小面团卷,这次27做的比较小,平均分成20份来着~</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033599843442.jpg" title="DSC_0015.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 9、再次擀成圆形的面皮,放入适量的馅儿,包好后,收口朝下,揉成自己喜欢的形状后,在表层均匀的刷上一层蛋黄液。</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033601224542.jpg" title="DSC_0017.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 10、撒上适量的芝麻。</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033601353642.jpg" title="DSC_0019.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 11、用小刀在表面划上两个小口子,划穿面皮。</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033601482341.jpg" title="DSC_0023.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; 12、放进预热好的烤箱,200℃,15分钟左右就可以啦~</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/14033602703611.jpg" title="DSC_0027.jpg" data-pinit="registered"/></center></p><p><strong></strong></p><p><strong>&nbsp; &nbsp; 这次的外皮是做的酥皮的,外酥里软,个人感觉比传统的老婆饼的外皮要好吃一点~也可能是因为上一次27用传统老婆饼的外皮做法做的爆裂的原因吧~哈哈哈~~总之~这次的实验也算成功啦~祝大家好胃口~下次见啦~~</strong></p><p><strong></strong></p><p><center><img src="http://i3.meishichina.com/attachment/201406/21/140336028362.jpg" title="DSC_0028.jpg" data-pinit="registered"/></center></p><p><strong></strong></p>
