Sauteeed Cod with Cod Cakes and Parsley Oil 中: &quot;奶油浓汤&quot;鳕鱼饼配香煎鳕鱼和意大利香油。在这道菜中我稍微改变,我把鳕鱼改为罗非鱼(鱼肉按自己喜欢去选择)。鳕鱼带点腥味,如果鱼肉冷了吃起来没那么好吃。但大部分做的和书上写的差不多。若有喜欢的不妨试试。</p><p></p><p><strong>材料</strong>:</p><p><strong>鱼</strong>:</p><p>罗非鱼或其它鱼种 4片 (长3英寸x宽2英寸x厚1英寸)</p><p></p><p><strong>鱼饼</strong>:</p><p>12安士(340.19克) 黄金土豆 (Gold potatoes) 去皮</p><p>1杯 干白葡萄酒 例: Sauvignon Blanc ”长相思“</p><p>2个中型 红葱头(Shallots)‍ &nbsp;切片</p><p>5片 蒜,压碎</p><p>6根 麝香草</p><p>12粒 黑胡椒</p><p>1汤匙 盐</p><p>5汤匙(2.5安士=70.87克) 无盐牛油 unsalted butter</p><p>3汤匙 橄榄油或油</p><p>1茶匙 蒜,切非常极细</p><p>2汤匙 Brunoise</p><p>2茶匙 意大利香菜, 切碎</p><p></p><p><strong>Clams</strong> 螺</p><p>12-20个小螺(大概1cm或更大) 用冷水泡和擦洗干净多次</p><p>1整个蒜,去皮</p><p>1/2个或1个 红葱头,去皮</p><p>1根 麝香草</p><p>1小张 月桂叶</p><p>1/4杯 干白葡萄酒 例: Sauvignon Blanc ”长相思“</p><p>1杯 重鲜奶油 Heavy cream</p><p>油</p><p>少许面粉 Flour for dusting</p><p>盐和白胡椒粉</p><p></p><p>&quot;Chowder&quot; 杂烩</p><p>1/4杯 切片的芹菜(刨皮和斜切1/16英寸(2mm), 烧开4杯水加1/4杯盐,稍微灼热10-15秒。口感带点脆脆。 拿出放入冰加水,用纸吸干。</p><p>1/3杯 1/4英寸(6.35mm) 黄金土豆小方块, 热水稍微煮熟,拿出备用</p><p>2-3 汤匙 Beurre monté</p><p>1/2茶匙 意大利香菜,&nbsp;非常细</p><p>1汤匙 Brunoise</p><p></p><p>意大利香菜油,放入小瓶子</p><p></p><p><strong>做法</strong>:</p><p></p><p>意大利香菜油:</p><p>1. 1/4杯盐和4杯的水烧热,把香菜放入烫水,30秒-35秒,拿出放入冰水。等香菜冷后拿出用纸吸乾多余的水分。放入搅拌机加橄榄油或油(足够的油能转动打成浆)。倒入隔渣包,放入冰箱1个晚上。第二天放入小瓶子里,备用。</p><p><center><img src="http://i3.meishichina.com/attachment/201408/4/14071309074374.jpg" style="width: 300px;
