</p><p>冰皮月饼的话其实我要把她归于新式月饼了</p><p>因为她省去了传统月饼的烘烤程序呢</p><p>操作过程也简单 做好就可以直接吃了</p><p>冰冰凉凉的口感</p><p> </p><p>做了双色冰皮冰皮月饼 来解解馋</p><p> 馅料的话是奶黄馅的</p><p>其实我倒是觉得馅更好吃呢 </p><p>下次奶黄包之类的又可以做起来了吧</p><p><center><img 冰皮;澄粉100克,糯米粉50克,牛奶150克,色拉油25克,白糖25克,抹茶粉5克,熟糯米粉(手粉)</p><p>步骤:1 先来做奶黄馅吧。黄油软化 </p><p> 2 加入砂糖搅拌均匀 </p><p> 3 分次加入鸡蛋搅拌均匀 </p><p> 4 加入淡奶油 </p><p> 5 最后加入澄粉 </p><p> 6 搅拌均匀,无细小颗粒,讲究的话可以过筛下 </p><p> 7 上锅蒸15-20分钟,隔5分钟取出搅拌,到凝固 </p><p> 8 放凉后用手揉匀,放冰箱冷藏备用 </p><p> 9 好了,继续来冰皮吧,将牛奶,色拉油和白糖混合搅拌均匀 </p><p> 10 澄粉和糯米粉称好备用 </p><p> 11 将牛奶液慢慢倒入粉中,边倒边搅拌 </p><p> 12 过筛下 </p><p> 13 盖保鲜膜上锅蒸20-25分钟,取出快速用筷子搅拌 </p><p> 14 取出晾凉,分成两块,部分加抹茶粉做成抹茶冰皮,将两种颜色的冰皮分别分割成30克一个 </p><p> 15 将奶黄馅分割成20克一个 </p><p> 16取一块抹茶冰皮,放上奶黄馅 </p><p>17 用手将皮网上推,最后包住奶黄馅 </p><p> 18 表明沾少量手粉,放入模具</p><p>19 按压出模型即可 </p><p> 20 原味的同样步骤哦 </p><p> 21 src="http://i3.meishichina.com/attachment/201409/6/14100100517404.jpg"/></center></p><p>燕子小唠叨: 1 奶黄馅的话淡奶油没有的话可以直接换成牛奶的,我是为了消耗家里的淡奶油的,不过用淡奶油的话会觉得最后的奶黄馅奶香味很足呢 2 冰皮的话这次换了一种配方,没有加粘米粉的,口感的话没有那么粘,,稍Q的口感了 3 我用的饼干模具是50克的,所以冰皮和馅料的比例就选择的是3:2,我觉得这样比较好包的,当然也可以将馅料做成30克的 4 奶黄馅的话也可以换成豆沙或者其他的</p><p><center><img style="FLOAT: none" title="001L7BOKgy6LohJhuPf89&690[1].jpg"
