/></p><p></p><p></p><p>无比鲜美腌笃鲜</p><p></p><p></p><p></p><p>腌笃鲜的做法其实就是把鲜肉和咸肉的美味全部融入竹笋和汤里。除了要炖</p><p>很长时间外,做法是很简单的,腌笃鲜怎么做,下面会一一介绍。做腌笃鲜</p><p>选择的竹笋很重要,要是鲜的春笋,也就这样季节才有,其中富阳笋和天目</p><p>山笋都很肥嫩。</p><p></p><p>此菜此乃苏州等江南地区的民间家常菜;<br />主要是春笋和鲜、咸肉一起煮的汤 “腌”,就是咸的意思;“鲜”,就是</p><p>新鲜的意思;“笃”,就是焖的意思。</p><p>笋既可作主料,也可当配料。在烹调中人们称它为“逢人配”、“百搭菜;”该菜是用腌肉、</p><p>鲜肉和笋,经慢火煨而成的,故称它为腌笃鲜。</p><p></p><p></p><p><br /><br /><center><img /></center></p><p></p><p></p><p>[腌笃鲜]</p><p>材料:</p><p>春笋半斤,鲜肉排骨1斤咸五花肉半斤(鲜肉部分可以放肘子五花肉或杂骨等代</p><p>替,咸肉部分可以放火腿肉代替)</p><p></p><p>步骤:</p><p>1 将肉洗干净,切块入砂锅,加入冷水葱姜和料酒,烧开后撇去浮末</p><p>2 盖上盖子,转小火炖2个小时,(可架根筷子防溢,期间多观察,当心烧干了)</p><p>3 将笋滚刀切好,将笋焯下水,2个小时后加入笋,再煮10分钟即可;</p><p>4 出锅了趁热吃哦。撒调味料都不用放极度的鲜美。</p><p></p><p></p><p><center><img 咸肉不要放太多了,不然会很咸的,再加水的话就不好吃了,所以宁可烧淡</p><p>点,大不了可以再加盐;</p><p>2 煲汤时,水一定要一次加足,我是加到砂锅的最高水位线的;</p><p>3 一顿不要吃太多哦,吃个1小碗就好了;</p><p>4
