                                                <p>新鲜淡水草鱼1条、黄豆芽【绿豆芽】、生菜1棵、黄瓜1根。花椒1把 &nbsp;、干辣椒20克、盐1勺 &nbsp;、鸡精1勺 &nbsp;、胡椒粉1勺 、八角5颗、香叶3勺、 桂皮2个、香油3勺、淀粉5勺 、 大蒜1个切片 、生姜1个切片、葱段6段、 料酒3勺、 郫县豆瓣酱1大勺 、 辣椒粉1勺 title="IMG_0941.jpg"/></center>我有一位酷爱钓鱼发烧友的老哥;只要到了周末那是雷打不动的去垂钓。虽然体会不到他的乐趣,老哥却会给我带来制作美食的素材。最开始老哥拿来二十多条不同品种的鱼,让我手忙脚乱了一阵子。现在是见怪不怪了,能够从容面对这一堆鱼。而且还自成一体制作不少菜式。</p><p><center><img 大蒜1个切片 、生姜1个切片、葱段6段、 料酒3勺、 郫县豆瓣酱1大勺 、 辣椒粉1勺 &nbsp;、鸡蛋清1个 、 清水500毫升。将草鱼肚剖开;拿掉内脏并切下鱼头,鱼头剖成两半;除去鱼鳍。将鱼身的肉斜切成厚约1厘米的鱼片,鱼骨剁成块。因为是乱炖草鱼片;所以就没有剔掉草鱼的骨头。鱼片和鱼骨中放入生姜和大葱段。<center><img src="http://i3.meishichina.com/attachment/201411/15/14160515756667.jpg" title="IMG_0828_2762625_副本.jpg"/></center>一勺料酒。加入一勺食盐调味。放进一个鸡蛋清。让草鱼肉滑嫩。一勺胡椒粉。避掉草鱼的鱼腥味。</p><p><center><img title="IMG_0809_副本.jpg"/></center>淀粉让草鱼更加嫩滑。将鸡蛋清、食盐、料酒、胡椒粉、淀粉搅拌均匀。放入冰箱腌制15至20分钟。黄豆芽掐根部,洗净备用。黄豆芽入加入少许盐的清水中煮至软、至熟捞出。铺在装水煮鱼的容器底部待用。冲洗干净的生菜平铺在黄豆芽上。</p><p><center><img title="IMG_0852_副本.jpg"/></center></p><p>切好的黄瓜段码放在容器底部。锅中放入油,将八角、花椒、干辣椒、桂皮、香叶放入,用小火加热,直到把香料炸成棕黄色;将香味炒出后,捞出香料不要,油待用;干红辣椒爆香至辣椒变色,留出一半的花椒、辣椒待用。倒入生姜片和大蒜片,炒出香味。<center><img src="http://i3.meishichina.com/attachment/201411/15/14160528027101.jpg" title="IMG_0899_2774296_副本.jpg"/></center>炒好的干红辣椒和生姜片、大蒜片汇入到一起。放入小米椒。炒锅烧热,放入3汤匙的五香油,放入剁碎的郫县豆瓣和黄豆酱炒香。一勺胡椒粉。加入一勺食盐调味。<center><img title="IMG_0857_2767484_副本.jpg"/></center>烹入适量的凉开水。放入两勺料酒。汇入鱼片至锅中。一勺老抽、一勺鸡精、一勺辣椒粉。事先留出的花椒、辣椒铺于在锅中爆香,已经煮好的乱炖鱼淋入热油即可。乱炖草鱼片的特点是又麻又辣,吃完之后大汗淋漓,非常过瘾~~~赶紧行动起来吧~~~爱吃辣的亲们!!!</p><p><center><img title="IMG_0926.jpg"/></center>【卖萌的柠檬7】温馨提示:鱼片尽量不要切厚,但也不能太薄哟,太厚了烫的时间长口感则差,太薄则容易碎。天气热的时候可以把鱼片放进冰箱腌制,,一切准备就绪再拿出。烫鱼片的时候用大火,2分钟左右即可,时间久了口感较差。如果你使用的是黄豆芽,事先要烫熟哦,生菜易熟,不用焯水。</p><p></p><p></p><p></p>
