标题: 香辣美味——水煮鱼

                                                <p>本来打算吃番茄鱼片的,结果老婆念叨着要吃辣的,于是,番茄鱼片就变成了这道水煮鱼了。</p><p>不过,拿来下饭吃,还真是过瘾。</p><p>水煮鱼:</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283280325788.jpg" title="IMG_20150406_174627.jpg"/></center></p><p>主辅料:黑鱼一条,黄豆芽半斤,干红椒十个,香菜适量,淀粉适量,蒜瓣六粒。</p><p>调料:白胡椒粉适量,郫县豆瓣酱一勺,料酒适量,盐三匙,鸡精或味精一匙,花椒适量,辣椒油适量。</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283118712.jpg" style="float:none;" title="IMG_20150406_163115.jpg"/></center></p><p>1、黑鱼一条宰杀洗净。</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283126274.jpg" style="float:none;" title="IMG_20150406_170246.jpg"/></center></p><p>2、片好鱼片,鱼骨与鱼肉片分开腌制。鱼片中加入一匙盐,一点料酒,一点辣椒油,少量玉米淀粉,抓匀;鱼骨加白胡椒粉,料酒,腌制待用。</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283143788.jpg" style="float:none;" title="IMG_20150406_173405.jpg"/></center></p><p>3、干辣椒剪段,用水浸泡一下,然后冷锅炒干水分,倒入植物油,炸出香味,将辣椒段捞出备用。</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283151229.jpg" style="float:none;" title="IMG_20150406_173537.jpg"/></center></p><p>4、郫县豆瓣酱剁碎,倒入锅中炒出红油,然后将鱼骨先倒入锅中炒。</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283169467.jpg" style="float:none;" title="IMG_20150406_173637.jpg"/></center></p><p>5、蒜瓣六粒拍碎,倒入锅中一同炒。然后加约一斤半的水,红椒段也倒入锅中,开大火煮沸一分钟。</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283169642.jpg" style="float:none;" title="IMG_20150406_174100.jpg"/></center></p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283176609.jpg" title="IMG_20150406_174139.jpg" style="font-family: sans-serif; font-size: 16px; float: none;"/></center></p><p>6、黄豆芽提前焯水,铺在大碗中。煮好的鱼骨用漏勺捞出,铺在豆芽上。</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283208404.jpg" style="float:none;" title="IMG_20150406_174207.jpg"/></center></p><p>7、鱼片倒入锅中,拨散,大火煮沸。</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283215793.jpg" style="float:none;" title="IMG_20150406_174312.jpg"/></center></p><p>8、放入香菜,出锅,全部倒入大碗中。</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283223077.jpg" style="float:none;" title="IMG_20150406_174543.jpg"/></center></p><p>9、一勺油烧至冒青烟,然后倒入放油花椒的汤勺中,再浇在鱼上。</p><p><center><img src="http://i3.meishichina.com/attachment/201504/6/14283283238179.jpg" style="float:none;" title="IMG_20150406_174627.jpg"/></center></p><p>10、今晚的大菜水煮鱼,完成。</p>
