                                                <center><img src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031517151268.jpg" width="400" height="600"  alt="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】"  title="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】" /></center>刚刚写博的时候上过一道简易版的水煮鱼,这次慢慢悠悠、正儿八经的做了一次,顿感川菜人气王的魅力有增无减,百吃不厌~蝴蝶片版本是第一次做,下次可能还会更好些<center><img type="face" src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031517151269.gif"  alt="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】"  title="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】" /></center><br />美味太多,但我们总是惦念着水煮鱼,它像大众情人一样长久的被人们喜爱着,十余年如一日的占领着我们的餐桌,红彤彤的辣椒热辣辣的油,雪白的鱼片麻辣鲜香,让人迫不及待的夹起一片送入口中。<p>【水煮鱼】</p><p>食材:草鱼1条(约重1000克),黄豆芽200克</p><p>配料:葱2段,姜1小块,蒜5瓣,料酒15毫升,花椒20克,麻椒20克,干辣椒20克,盐10克,鸡蛋1个,淀粉、白胡椒粉适量</p><p>做法:1、草鱼处理干净后,将鱼头剁下并分成两半,鱼身平放在案板上,用刀沿着鱼骨平着将两侧鱼肉片下来。</p><p>2、片好的鱼肉鱼皮朝下,第一刀不切断第二刀切断,切成厚度约3—5毫米的蝴蝶片展开</p><p>3、主刺剁成段和鱼头放在一起,片好的鱼片单独盛放,放入蛋清、少许盐、料酒、淀粉用手抓匀。</p><p>4、姜切片、蒜拍散切粒、葱切段、干辣椒切段备用。</p><p>5、黄豆芽洗净后入沸水汆烫三五分钟至熟,捞出放入宽口深碗或盆中备用。</p><p>6、炒锅中火加热入油,烧至六七成热时放入花椒、麻椒,两三分钟后放入干辣椒小火炸香。然后放入葱姜蒜炒香。</p><p>7、将鱼头和鱼排放入锅中翻炒几下,调入料酒和盐。</p><p>8、再加入热水大火煮开。</p><p>9、待鱼头煮沸出香味后,将蝴蝶片一片一片平放到锅中,煮至变色。</p><p>10、鱼片变白后立刻关火,出锅前撒少许白胡椒粉,倒入黄豆芽打底的盆中。</p><p>11、另起锅,倒入食用油,放入干辣椒、花椒炸香,淋在鱼片上即可。</p><br /><center><img src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031517151270.jpg" width="650" height="411"  alt="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】"  title="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】" /></center><br /><br /><center><img src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031517161271.jpg" width="650" height="411"  alt="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】"  title="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】" /></center><br /><br /><center><img src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031517161272.jpg" width="650" height="411"  alt="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】"  title="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】" /></center><br /><br /><center><img src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031517171273.jpg" width="550" height="367"  alt="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】"  title="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】" /></center><br /><center><img src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031517171274.jpg"  alt="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】"  title="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】" /></center><br /><br /><p>Olivia美食笔记:</p><p><center><img type="face" src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031517171275.gif" style="line-height: 1.5;"  alt="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】"  title="一口香二口辣三口停不下wbr自制麻辣川菜人气王&mdash;&mdash;【水煮鱼】" /></center>买鱼的时候处理干净,去鳞去腮去内脏,去掉鱼肚子里的黑膜,回来后冲洗干净就好了。</p><p><center><img type="face" src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031517171276.gif" style="font-family: Microsoft YaHei, simsun, Verdana, Arial, Helvetica, sans-serif;
