HeiGHT: 537px" name="image_operate_12871433929208843" src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031556513645.jpg" width="594" height="565" alt="小窍门速成美味乡巴佬卤蛋——端午节预热" title="小窍门速成美味乡巴佬卤蛋——端午节预热" /></center></p><p><br />食材:鸡蛋10只、啤酒1罐、香叶0.5克、桂皮4克、八角2克、花椒1克、冰糖15克、老抽3大勺、生抽1大勺、盐适量</p><p>做法:<center><img name="image_operate_18481433929207859" src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031556513646.jpg" width="690" height="290" alt="小窍门速成美味乡巴佬卤蛋——端午节预热" title="小窍门速成美味乡巴佬卤蛋——端午节预热" /></center><br />1、鸡蛋洗净,冷水加盐下锅煮熟。<br /><center><img name="image_operate_48091433929207515" src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031556513647.jpg" width="690" height="290" alt="小窍门速成美味乡巴佬卤蛋——端午节预热" title="小窍门速成美味乡巴佬卤蛋——端午节预热" /></center><br />2、煮好的鸡蛋在冷水中浸泡放凉、去皮,再放进煮锅里。<center><img name="image_operate_72151433929207171" src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031556513648.jpg" width="690" height="290" alt="小窍门速成美味乡巴佬卤蛋——端午节预热" title="小窍门速成美味乡巴佬卤蛋——端午节预热" /></center><br />3、倒入啤酒,放入香叶、八角、桂皮、花椒。<br /><center><img name="image_operate_72991433929206812" src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031556513649.jpg" width="690" height="290" alt="小窍门速成美味乡巴佬卤蛋——端午节预热" title="小窍门速成美味乡巴佬卤蛋——端午节预热" /></center><br />4、倒入冰糖和生抽、盐。(我家喜欢吃淡一点的,这里都不再放盐了,放盐会更入味)</p><p><center><img name="image_operate_211433929206484" src="http://i3.meishichina.com/attachment/good/2015/08/03/201508031556513650.jpg" width="690" height="290" alt="小窍门速成美味乡巴佬卤蛋——端午节预热" title="小窍门速成美味乡巴佬卤蛋——端午节预热" /></center><br />5、倒入老抽开大火煮,大约五分钟后,鸡蛋已经呈现漂亮的酱红色了。继续小火卤约十分钟后,离火,鸡蛋一直浸泡在卤汁中,随吃随取。(这样做好就能直接吃了,但要想卤成图中我卤的色泽,最好要浸泡12小时以上再用小火煮开,味道会更浓郁)</p><p>小窍门:</p><p>1、煮鸡蛋一定要冷水下锅,稍微放点盐,是为了防止鸡蛋在煮的过程中开裂。剥壳的鸡蛋要去掉里面那层薄膜,这样入味更快。<br />2、要先放入啤酒,最好没过鸡蛋,开大火煮啤酒的醇香味快速溶入到鸡蛋里。<br />3、卤水煮蛋的过程中,隔一会需要用炒勺反动一下鸡蛋,目的是使得鸡蛋上色更加均匀。<br />4、大火五分钟后,鸡蛋已呈现酱红色了,继续用卤十分钟后就可以吃了。剩下的鸡蛋继续浸泡在卤汁中,卤汁浸泡得越久鸡蛋会越香醇味美。</p><p><center><img style="WiDTH: 591px;
