                                                <p><center><img src="http://i3.meishichina.com/attachment/201605/29/14645007955807.jpg" title="20160414_100710_副本.jpg" style="font-family: sans-serif; font-size: 16px; float: none;"/></center></p><p>&nbsp;买了几块牛腱子,平时做法总是用老汤酱牛腱,一点新意也没有,今天打算做一些新的尝试,牛腱焯过水后取出一块牛腱只加了些简单调料,做白切牛肉,没想到这样原汁原味的牛肉更受欢迎!<strong>”</strong></p><p><center><img src="http://i3.meishichina.com/attachment/201605/29/14645007981226.jpg" title="20160414_101004_副本.jpg" style="line-height: 1.6; float: none;"/></center></p><p>主料:牛腱子700克<br/></p><p>调料:葱姜、小茴香、草果、丁香、八角</p><p>蘸料:青蒜、香葱、辣椒粉、香醋、鲜味酱油、味精、白糖</p><p><br/></p><p><center><img src="http://i3.meishichina.com/attachment/201605/29/14645010212875.jpg" title="P1450189_副本_副本.jpg" style="line-height: 1.6; float: none;"/></center></p><p>做法:1、牛腱子清洗干净放入冷水中浸泡出血水。</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;2、准备调料:葱姜、小茴香、八角、丁香、草果。</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;3、浸泡好的牛腱子热水下锅 煮沸后撇去浮末</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 4、撇去浮末的牛腱子捞出 用温水洗去附在腱子上的浮末。</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 5、锅中加足量水放入焯过水洗净的腱子,加入葱姜、八角、草果等条调料。</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; 6、大火烧沸改小火炖制。(如果有浮末继续撇去)</p><p><center><img src="http://i3.meishichina.com/attachment/201605/29/14645017336803.jpg" title="P1450215_副本_副本.jpg"/></center></p><p>做法:7、小火炖1小时左右放入少许食盐,继续小火焖炖。直至炖到用筷子能轻松扎透略有阻力关火。</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;8、牛腱子煮制的时候只加了一点点盐做底味,吃的时候需要调一个蘸汁;小葱、大蒜、青蒜分别切末。</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;9、切好的 青蒜末、大蒜、小葱末一起放入碗中,加入辣椒粉,把食用油烧热浇在上面激出香味。</p><p>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;10、激出香味后依次加入香醋、香油、味精、白糖、生抽调匀成料汁。</p><p>&nbsp; &nbsp; &nbsp;11-12、牛腱自然凉透后切薄片码入盘中,带上做好的蘸汁,大块吃肉吧!</p><p><center><img src="http://i3.meishichina.com/attachment/201605/29/14645009409709.jpg" style="float:none;" title="20160414_101052_副本.jpg"/></center></p><p><br/></p><p><center><img src="http://i3.meishichina.com/attachment/201605/29/14645009386252.jpg" title="20160414_100922_副本.jpg" style="font-family: sans-serif; font-size: 16px; float: none;"/></center><center><img src="http://i3.meishichina.com/attachment/201605/29/14645009378764.jpg" title="20160414_100624_副本.jpg" style="font-family: sans-serif; font-size: 16px; float: none;"/></center></p><p>叨唠:白切牛肉最后还要带蘸料,炖制的时候加入少许食盐给些底味即可。<br style="color: rgb(102, 102, 102); font-family: Arial, Helvetica, sans-serif; font-size: 14px; line-height: 24px; white-space: normal; background-color: rgb(255, 255, 255);"/>&nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;蘸料可以根据自己口味调整。</p>
