使人连吃三碗饭的一道菜---酱肉蒸蛋


无比鲜美腌笃鲜

腌笃鲜的做法其实就是把鲜肉和咸肉的美味全部融入竹笋和汤里。除了要炖

很长时间外,做法是很简单的,腌笃鲜怎么做,下面会一一介绍。做腌笃鲜

选择的竹笋很重要,要是鲜的春笋,也就这样季节才有,其中富阳笋和天目

山笋都很肥嫩。

此菜此乃苏州等江南地区的民间家常菜;
主要是春笋和鲜、咸肉一起煮的汤 “腌”,就是咸的意思;“鲜”,就是

新鲜的意思;“笃”,就是焖的意思。

笋既可作主料,也可当配料。在烹调中人们称它为“逢人配”、“百搭菜;”该菜是用腌肉、

鲜肉和笋,经慢火煨而成的,故称它为腌笃鲜。



[腌笃鲜]

材料:

春笋半斤,鲜肉排骨1斤咸五花肉半斤(鲜肉部分可以放肘子五花肉或杂骨等代

替,咸肉部分可以放火腿肉代替)

步骤:

1 将肉洗干净,切块入砂锅,加入冷水葱姜和料酒,烧开后撇去浮末

2 盖上盖子,转小火炖2个小时,(可架根筷子防溢,期间多观察,当心烧干了)

3 将笋滚刀切好,将笋焯下水,2个小时后加入笋,再煮10分钟即可;

4 出锅了趁热吃哦。撒调味料都不用放极度的鲜美。





主妇心得:

1 咸肉不要放太多了,不然会很咸的,再加水的话就不好吃了,所以宁可烧淡

点,大不了可以再加盐;

2 煲汤时,水一定要一次加足,我是加到砂锅的最高水位线的;

3 一顿不要吃太多哦,吃个1小碗就好了;

4 我很不喜欢把肉上的猪皮放进去同煮,我觉得严重影响味道,可能很多人不

这么认为,这纯属个人喜好而已,我觉去掉猪皮,猪肉的土腥味会少很多.

【食谱营养】  

猪肉:猪肉含有丰富的优质蛋白质和必需的脂肪酸,并提供血红素(有机铁)

和促进铁吸收的半胱氨酸,能改善缺铁性贫血;具有补肾养血,滋阴润燥的

功效;但由于猪肉中胆固醇含量偏高,故肥胖人群及血脂较高者不宜多食。

  春笋:春笋味道清淡鲜嫩,营养丰富。含有充足的水分、丰富的植物蛋

白以及钙、磷、铁等人体必需的营养成分和微量元素,特别是纤维素含量很

高,常食有帮助消化、防止便秘的功能。所以春笋是高蛋白、低脂肪、低淀

粉、多粗纤维素的营养美食。现代医学证实,吃笋有滋阴、益血、化痰、消

食、利便、明目等功效。

  咸肉:咸肉中磷、钾、钠的含量丰富,还含有脂肪、蛋白质等元素。咸

肉具有开胃祛寒、消食等功效。腌制食品中有较多量的硝酸盐和亚硝酸盐,

且不可过量食用。

外婆回答:"哦,蛋蛋把小被子尿湿了呀!没关系的,

蛋回答:"袄,那好吧!"

转身跟我说:"老妈,外婆叫你帮我洗下小被子."
