家常川菜——麻婆豆腐
<p>麻婆豆腐:<br/></p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/14335980327185.jpg" title="IMG_20150601_081638.jpg"/></center></p><p>主辅料:内酯豆腐一盒,豆瓣酱一勺,花椒一小把,瘦肉50克</p><p>调料:盐半匙,鸡精一匙,浓汤宝一个</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/14335980446872.jpg" style="float:none;" title="IMG_20150601_075942.jpg"/></center></p><p>1、瘦肉切成末,豆瓣酱剁碎。</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/14335980458879.jpg" style="float:none;" title="IMG_20150601_080049.jpg"/></center></p><p>2、锅中烧油,丢一小把花椒进去炸出香味,然后捞出放一边待用。</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/14335980465032.jpg" style="float:none;" title="IMG_20150601_080228.jpg"/></center></p><p>3、将肉末下入锅中炒。</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/1433598046166.jpg" style="float:none;" title="IMG_20150601_080337.jpg"/></center></p><p>4、肉末炒变色后加豆瓣酱炒出红油,然后加一碗水,放入一个浓汤宝(也可以用高汤代替水,这样就不用浓汤宝了)。</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/14335980489507.jpg" style="float:none;" title="IMG_20150601_080534.jpg"/></center></p><p>5、豆腐撕去表面封膜,四个角用刀切开,然后对角向里面吹气,这样就能轻松脱盒了。</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/14335980492925.jpg" style="float:none;" title="IMG_20150601_080725.jpg"/></center></p><p>6、纵横下刀,打成大约1.5厘米见方。(这个豆腐被我弄碎了,因为我嫌麻烦只吹了一个角就提盒子了,结果没完全出来,补救了一下)</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/1433598050842.jpg" style="float:none;" title="IMG_20150601_080749.jpg"/></center></p><p>7、平行于案板将豆腐打成三份,锅中汤水烧沸后下锅。</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/14335980502840.jpg" style="float:none;" title="IMG_20150601_080844.jpg"/></center></p><p>8、用锅铲轻轻推,中火煮约三分钟。</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/14335980519024.jpg" style="float:none;" title="IMG_20150601_081318.jpg"/></center></p><p>9、水收少一点之后,加水淀粉勾薄芡。</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/14335980512725.jpg" style="float:none;" title="IMG_20150601_081500.jpg"/></center></p><p>10、出锅。</p><p><center><img src="http://i3.meishichina.com/attachment/201506/6/14335980525948.jpg" style="float:none;" title="IMG_20150601_081638.jpg"/></center></p><p>11、之前的花椒撒在上面,然后撒点葱花点缀。(没买葱,用了根香芹叶。)</p>
